Whether you're in the mood for something indulgent to kick off the weekend or whipping up an extra special dish for family, brunch is a meal certain to be the center of good times. However, not many of us are particularly fond of getting up early in the morning to whip up a breakfast feast and fill the sink up with dishes - especially on the weekend. The solution is simple - do just a little bit of work the day ahead of when you have the energy (and the will to do dishes!) and in the morning, all you need to do is throw it in the oven until it's perfectly golden brown, cheesy and delicious.
We've got just the recipe: a crowd-pleasing breakfast casserole, known as a strata, loaded with Italian flavors that we love. Tomatoes, basil and mozzarella are the quintessential ingredients of our favorite summer side dish from Capri: the Caprese salad! In summer, we love adding these flavors to just about everything, and breakfast is no exception. For this strata, we introduced the Caprese flavors in the form of broiled cherry tomatoes, pesto, and melty mozzarella cheese.
There's a special ingredient that takes it over the top, too - instead of opting for regular bread in this savory strata, we chose the king of breakfast breads: bagels. Thomas' Bagels were the perfect medium to build this casserole - they get impossibly fluffy while soaking up all the flavors of the strata in the oven, and they have a perfect sweetness that pairs so well with the savory pesto.
Let's just say, bagels might be only thing we're going to use in stratas from now on. Thomas' Bagels are super soft and delicious, and cooking them in this way brought out the best in them.
