Ingredients
- 1 pint vanilla ice cream

1/2 cup pistachio spread, plus more to serve
- 1/4 teaspoon kosher salt
- 2 tablespoons to ¼ cup half-and-half, depending on your desired consistency
- 2 tablespoons chopped salted pistachios, plus more to serve
Instructions
To the pitcher of a high speed blender add the ice cream, pistachio cream, salt and half and half. Puree on high, stopping to scrape down the sides as needed, until smooth and thick. Add the chopped pistachios and pulse to combine. Divide into 2 to 4 glasses and serve with a straw and a spoon, topped with more pistachios if desired.
