At McDonald’s in Italy, a Pistachio version of the McFlurry exists - and the moment we saw it, we knew we had to recreate it. This ice cream creation is somewhere in between soft serve and a milkshake (you can add more or less half-and-half for your desired consistency) and it’s absolutely divine. The powerhouse ingredient here is the Sicilian pistachio spread; it gives a subtly nutty flavor to the dessert, and when drizzled on top afterward, it hardens into a delicious pistachio shell.

Ingredients
1 pint vanilla ice cream
1/2 cup pistachio spread, plus more to serve
1/4 teaspoon kosher salt
2 tablespoons to ¼ cup half-and-half, depending on your desired consistency
2 tablespoons chopped salted pistachios, plus more to serve
Instructions
To the pitcher of a high speed blender add the ice cream, pistachio cream, salt and half and half. Puree on high, stopping to scrape down the sides as needed, until smooth and thick. Add the chopped pistachios and pulse to combine. Divide into 2 to 4 glasses and serve with a straw and a spoon, topped with more pistachios if desired.
