This chic, simple skewer leans on the punchy flavors of a dirty martini, utilizing olive brine among other bright flavors to marinate the tomatoes, mozzarella and olives. In summer, this is fabulous with fresh cherry tomatoes - but for the remainder of the year, canned datterini are a perfect substitute.

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 cup Castelvetrano olives, pitted (reserve the brine)

  • 2 tablespoons olive brine (from the olives)

  • 2 tablespoons fresh lemon juice

  • 2 wide strips lemon peel

  • 2 small garlic cloves, lightly crushed

  • Freshly cracked black pepper

  • 1 can red cherry tomatoes, drained, or 1 dry pint fresh cherry tomatoes
  • 8 oz fresh mozzarella balls (ciliegine or perlini)

Instructions

  1. In a medium bowl, whisk together the olive oil, olive brine, lemon juice, lemon peel, garlic, and a few generous cracks of black pepper.
  2. Add the cherry tomatoes, olives, and mozzarella balls to the bowl and toss gently until everything is well coated in the marinade. Cover and refrigerate for at least 4 hours, or overnight for best flavor.
  3. When ready to assemble, thread one marinated tomato, one or two mozzarella balls (depending on size), and one olive onto small skewers or cocktail picks.
  4. Arrange on a serving platter and spoon a little of the marinade over the top.
