Dirty Martini Caprese Skewers

Ingredients

1/4 cup extra-virgin olive oil
1 cup Castelvetrano olives, pitted (reserve the brine)
2 tablespoons olive brine (from the olives)
2 tablespoons fresh lemon juice
2 wide strips lemon peel
2 small garlic cloves, lightly crushed
Freshly cracked black pepper

1 can red cherry tomatoes, drained, or 1 dry pint fresh cherry tomatoes
8 oz fresh mozzarella balls (ciliegine or perlini)
Instructions
- In a medium bowl, whisk together the olive oil, olive brine, lemon juice, lemon peel, garlic, and a few generous cracks of black pepper.
- Add the cherry tomatoes, olives, and mozzarella balls to the bowl and toss gently until everything is well coated in the marinade. Cover and refrigerate for at least 4 hours, or overnight for best flavor.
- When ready to assemble, thread one marinated tomato, one or two mozzarella balls (depending on size), and one olive onto small skewers or cocktail picks.
- Arrange on a serving platter and spoon a little of the marinade over the top.
