This dish is inspired by one of Giada’s most beloved appetizers: her red pepper savory cheesecake. We wanted to give it a cozy spin for fall and winter by serving it hot and melty right out of the oven, and it’s everything we dreamed of. Sweet, spicy and cheesy, it’s the ultimate crowd pleaser of a dip. A tablespoon of Calabrian chili paste may seem like a lot, but it just gives it a slight warmth throughout; if you have a higher tolerance for heat, feel free to add more to taste.   

For preparation, you can heat and serve this dish right when you make it, or assemble it and stick it in the fridge for a few days until you’re ready to serve it up.

  1. Preheat the oven to 415 degrees F.
  2. Place the ricotta, cream cheese, goat cheese, salt and paprika in a food processor, or in a bowl with an electric mixer. Pulse to mix. Add 2 tablespoons of apricot jam and Calabrian chili paste, and pulse a few times until well mixed. Spoon the cheese mixture into a medium, shallow ceramic baking dish. If making ahead of time, cover and refrigerate for up to 3 days. Otherwise, continue to bake.
  3. Bake in the oven until golden brown and bubbly, about 30 minutes. Remove from the oven and allow to slightly cool for 5 to 10 minutes. Carefully spoon the remaining 1/4 cup apricot jam over the dip and spread to cover the top. Serve warm with pita chips, crackers or vegetables.

    Hello is this suppose to get bubbly in the oven? Are you sure it’s supposed to bake at 415°?

    Ciao! It’s totally supposed to get bubbly & hot! it gets topped with apricot jam so it looks pretty after it gets brown in the oven!
