This dish is inspired by one of Giada’s most beloved appetizers: her red pepper savory cheesecake. We wanted to give it a cozy spin for fall and winter by serving it hot and melty right out of the oven, and it’s everything we dreamed of. Sweet, spicy and cheesy, it’s the ultimate crowd pleaser of a dip. A tablespoon of Calabrian chili paste may seem like a lot, but it just gives it a slight warmth throughout; if you have a higher tolerance for heat, feel free to add more to taste.
For preparation, you can heat and serve this dish right when you make it, or assemble it and stick it in the fridge for a few days until you’re ready to serve it up.

Ingredients
- 1 cup (8 ounces) whole milk ricotta cheese
- 1 cup (8 ounces) cream cheese
- 1 cup (8 ounces) goat cheese
-
1 ¼ teaspoons lemon oregano salt, or kosher salt
- ½ teaspoon paprika
- ¼ cup and 2 tablespoons apricot jam, divided
-
1 tablespoon Calabrian chili paste (or more, for desired heat level)
- Pita chips, crackers and vegetables, for serving
Instructions
- Preheat the oven to 415 degrees F.
- Place the ricotta, cream cheese, goat cheese, salt and paprika in a food processor, or in a bowl with an electric mixer. Pulse to mix. Add 2 tablespoons of apricot jam and Calabrian chili paste, and pulse a few times until well mixed. Spoon the cheese mixture into a medium, shallow ceramic baking dish. If making ahead of time, cover and refrigerate for up to 3 days. Otherwise, continue to bake.
- Bake in the oven until golden brown and bubbly, about 30 minutes. Remove from the oven and allow to slightly cool for 5 to 10 minutes. Carefully spoon the remaining 1/4 cup apricot jam over the dip and spread to cover the top. Serve warm with pita chips, crackers or vegetables.
