  1. Preheat the oven to 425 degrees F. Prepare two muffin pans with nonstick cooking spray. Once the oven is at temperature, place the pans in the oven for 10 minutes to heat up. Alternatively, instead of placing the pans in the oven, you can use paper muffin cups to line the pans for easy removal of the popovers.

  2. In a blender, combine the eggs, flour, salt, pepper, Italian seasoning, and parsley. Blend on medium speed until combined. Turn the blender to low and slowly add the milk, and then the cheese, until just combined. Scrape the bottom of the blender with a silicone spatula to ensure all flour has been incorporated.
  3. Carefully remove the pans from the oven, and pour the batter into the muffin cups, filling each cup almost to the top. Bake until puffed and golden brown, about 27 to 30 minutes.

  4. Remove from the oven and allow at least 10 minutes for the popovers to slightly cool down, and release them with a nonstick spatula or thin knife. Serve warm with butter.
