Soba Noodle Salad


This soba noodle salad is jam-packed with flavor and veggies to bring on the nutritional boost. It's great on day 1, but even better after hanging out in the fridge overnight (and even up to a few days!)


 

Vegetarian Slow Cooker Chili Verde


This loaded chili verde is so easy, the slow cooker does all the work for you. Since this dish is so hands-off, it's a great one for feeding a crowd.

Authentically, this dish is made with potato starch vermicelli noodles, but you can just as easily substitute with angel hair pasta.
