Valentine's Day is all about a little indulgence - a fancier dinner than the norm, a decadent dessert, and treating one another to something special. So you don't feel weighed down before the big date night, why not kick off the celebrations with a healthy brunch that will have you feeling good all day long?
Whether or not you have an aversion to gluten, these super fluffy pancakes are welcome on any plate! Along with quinoa that gets folded into the batter (and adds a super pleasing texture!) you can add in blueberries, chocolate chips, or any one of your fav mix-ins.
This parfait is loaded with all the good stuff! We chose coconut yogurt, but it's equally as delicious with good ol' Greek yogurt. Layers of crunchy and deliciously salted olive oil granola, yogurt, sweet-as-candy dried fruit and berries make for the perfect bite every time you go in.
