A twist on traditional sweet oats, this savory variation uses extra-virgin olive oil and oranges in lieu of oft- favored brown sugar. The olive oil is packed with heart-healthy monounsaturated fats to help stabilize blood sugar and control cravings throughout the day.
Oatmeal with Olive Oil and Oranges
1⁄2 teaspoon fine salt
2 cups old-fashioned rolled oats
Grated zest of 1⁄2 lemon, or more to taste
1 teaspoon fresh thyme, or more to taste, chopped
4 teaspoons extra-virgin olive oil
1 orange, cut into segments
1⁄4 cup raw almonds, chopped
In a medium saucepan, bring 31⁄2 cups water and the salt to a boil over medium heat. Add the oats and cook, stirring frequently, until creamy, 6 to 7 minutes. For a thicker consistency, cook for 1 to 2 minutes longer.
Stir in the lemon zest and thyme. Spoon the oatmeal into 4 bowls. Drizzle with the olive oil and top with oranges and almonds.
