Getting the most out of grilled chicken comes down to a really great, flavorful marinade, and this is my everyday go-to. The Tuscan Grill seasoning really does a lot of the legwork with a blend of all of my favorite herbs: dried rosemary, sage, garlic, fennel, thyme and oregano.

The lemon juice brightens everything up, and I always marinade my chicken in olive oil before it hits the grill–not only does it give the chicken more great flavor, but it keeps it from sticking to the grates as well. The result is a perfect grilled chicken breast that you can serve any way you like. It’s great served hot with grilled veggies for a truly summery dinner, but it’s also delicious chilled and tossed in salad (it's the perfect chicken for a Caesar Salad!).

I like to marinade the chicken for at least two hours, but I don't go over 6; if chicken sits in lemon juice for too long, it can actually have an adverse effect and make it more tough!

  1. For the chicken, using a sharp knife, carefully cut the chicken breasts in half horizontally as if you are opening each one up like a book. You should have a total of 8 thin filets when done. (Alternatively, you can ask a butcher to do this step for you.)

  2. In a medium-sized bowl or tupperware, combine the Tuscan grill seasoning, kosher salt, lemon juice and olive oil until combined. Place the chicken filets in the marinade, turning them over to ensure that all of the surface area gets coated in marinade. Refrigerate for at least 2 hours and up to 6 hours maximum - if you marinate any longer, the lemon juice could start making the chicken tough.
  3. Preheat a grill pan or propane grill to medium high heat.
  4. Remove the chicken breasts and place on the hot grill. Cook until deep grill marks have formed on the first side, roughly 4 to 5 minutes. Flip the chicken and grill until browned on the second side and cooked through, about 3 minutes longer.
  5. Allow the chicken to rest for 5 minutes before cutting and serving.
