This incredibly easy grilled shrimp recipe is an absolute keeper for summer. Equally perfect for a fast and flavorful weeknight dinner or an elegant main course for company, these skewers are so simple to whip up. Salmoriglio sauce is a Sicilian condiment that’s bright, herbaceous and fresh, which makes it the perfect accompaniment to seafood. In this recipe, we use it both to marinate the shrimp and serve it alongside. Give it an extra squeeze of lemon for an additional touch of brightness!  

Serve these alongside any simple pasta, such as Giada’s lemon spaghetti or cacio e pepe, for a perfect pairing.

Ingredients

  • 1 cup parsley leaves 
  • ¼ cup oregano leaves  
  • 1 small clove garlic 
  • 1 lemon, zested and juiced  
  • ½ teaspoon kosher salt 
  • ¼ cup extra virgin olive oil  
  • 1 pound large shrimp, peeled and deveined with tails intact  
  • Lemon wedges, for garnish  

Instructions

  1. Finely chop the parsley and oregano leaves and add to a small bowl. Grate in the garlic clove directly into the bowl. Add the lemon zest, lemon juice, salt and olive oil to the bowl and stir to combine.
  2. Add the shrimp to a mixing bowl and top with 2 tablespoons of the sauce, stir to combine. Thread the shrimp onto metal skewers** and let marinate for no longer than 15 minutes.
  3. Preheat an outdoor grill or grill pan to medium-high heat and oil the grates. Once the grill is hot, place the shrimp skewers on the grill. Cook for 3 minutes, until the shrimp tails are pink and the skewers easily remove from the grill. Flip and cook for an additional 3 minutes, until cooked through. Remove to a plate. Drizzle the skewers with the sauce and garnish with lemon wedges. Serve with additional sauce on the side.
  4. Note: If using wooden skewers, be sure to soak them in water for 30 minutes before using.
