Simple Bolognese

Ingredients

1/4 cup extra-virgin olive oil
- 1 medium onion (coarsely chopped)
- 2 garlic cloves (peeled and coarsely chopped)
- 1 celery stalk (coarsely chopped)
- 1 carrot (coarsely chopped)
- 1 pound ground chuck beef

2 14-ounce cans cherry tomatoes, crushed
- 1/4 cup flat-leaf Italian parsley (chopped)
- 8 fresh basil leaves (chopped)

Salt and freshly ground black pepper
- 1/4 cup freshly grated Pecorino Romano

1 lb of pasta, such as pappardelle
Instructions
In a large skillet heat the olive oil. When almost smoking, add the onion and garlic and saute over medium heat until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes. Raise the heat to high and add the ground beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 10 minutes. Add the tomatoes, parsley, and basil and cook over medium low heat until the sauce thickens. Season with salt and pepper. This will take approximately 1/2 hour. Finish the bolognese with Pecorino Romano.
Meanwhile, bring a large pot of water to a boil over high heat. Season generously with kosher salt. Add the pasta to the water and cook for 2 minutes less than directed, about 8 to 9 minutes. Using tongs, add the pasta directly from the pasta water to the sauce. Serve drizzled with more olive oil and sprinkled with more cheese if desired.

One of the best bolognese recipes!!!
Been making this for years. Kids love it. Even as adults when they come home to visit ask me to make some.
My family RAVED about this one. My husband said it was the best “spaghetti” he’s ever had. My 6 year old, picky eater daughter said it was an explosion of deliciousness on her tongue and she loved it more than regular spaghetti. Our 3 year old devoured it too! I added a dash of sugar at the salt and pepper seasoning stage and that was it! Will definitely be making again!!

Favorite recipe ever, ever, ever! I always make a double batch- one to eat now then the second to freeze. My kids love it too and it keeps well in the fridge for leftovers. Highly recommend.

How much olive oil did you use? I don’t see it mentioned in the recipe!
