Ingredients

  • 1 box Giadzy pasta, such as Nodi Marini or GF Casarecce
  • 1/4 cup extra-virgin olive oil

  • 1 medium onion, coarsely chopped

  • 2 garlic cloves, peeled and coarsely chopped

  • 1 celery stalk, coarsely chopped

  • 1 carrot, coarsely chopped

  • 1 pound ground chuck beef

  • 2 14-ounce cans cherry tomatoes, crushed
  • 1 teaspoon kosher salt

  • 2 teaspoons Tuscan Herb Blend
  • 1/4 cup freshly grated Pecorino or Parmesan

Instructions

  1. In a large skillet, heat the olive oil. Add the onion and garlic and saute over medium heat until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes.

  2. Raise the heat to high and add the ground beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 10 minutes.

  3. Add the tomatoes, salt and Tuscan Herb Blend, and cook over medium low heat until the sauce thickens, about 30 minutes. Finish the bolognese with Pecorino Romano. Taste and add any additional salt if needed.

  4. Meanwhile, bring a large pot of water to a boil over high heat. Season generously with kosher salt. Add the pasta to the water and cook for 2 minutes less than directed, about 8 to 9 minutes.

  5. Add the pasta directly from the pasta water to the sauce. Serve drizzled with more olive oil and sprinkled with more cheese if desired.
