That's exactly what this episode of Giada On The Beach was all about! Light, easy, seasonal food inspired by the best looking produce at the farmer's market. My bruschetta with peaches, corn & burrata is like a celebration of summer, with fresh basil and fresno chili for a spicy kick to balance the sweetness. And really, you can't go wrong with burrata in almost any situation!
The grilled salad uses a blend of curly and Tuscan (lacinato) kale with bright, beautiful sungold tomatoes. Avocados are perfectly in season right now and make a great addition full of healthy fats, along with one of my favorite things: almonds! Raw kale salads can sometimes be too fibrous, and throwing the leaves on the grill tenderizes the leaves while giving them a great charred flavor.
To me, summertime is all about big, bold flavor. For the main dish, I decided to go big with my Cherry Balsamic Chicken. Sweet jarred cherries make an excellent marinade along with balsamic vinegar and mustard for sweet, sticky grill-roasted chicken. It was a HUGE hit and I'll be making it all summer long!
Of course, it's no party without dessert. This is a light, moist cake made with yogurt and studded with farm fresh strawberries, and it's to-die-for with a dollop of lightly honey-sweetened whipped cream.
Perfect summer lunch? Yes!
