It can be all too easy to fall into the takeout or frozen meal habit at work, especially in the warmer months when leftover casseroles and stews aren't aplenty. The solution? Plan ahead with these healthy, bright and simple salads that you can whip up on Sunday and take with you to work all week 'til they run out.
There are a few secrets to making a salad that lasts through the week! First and foremost: if it's gonna wilt (like romaine lettuce) or go bad (like avocado) don't add it, unless you mix it in the morning of. Giada's Chicken, Mango & Black Bean salad from Feel Good Food is a perfect example of a salad that won't go soggy, and will stay bright and flavorful for days.
Tangy orzo salad is a super popular recipe of Giada's, and with good reason. It's so simple with minimal ingredients and effort, but gets a great variety of flavor from fennel, cranberries, arugula and mozzarella. Arugula doesn't wilt like romaine or other greens do, so it stands up great in the fridge for several days! For maximum freshness, store the butter lettuce separately in a plastic bag in the fridge with a damp paper towel folded inside to keep them extra crisp.
