It can be all too easy to fall into the takeout or frozen meal habit at work, especially in the warmer months when leftover casseroles and stews aren't aplenty. The solution? Plan ahead with these healthy, bright and simple salads that you can whip up on Sunday and take with you to work all week 'til they run out.
There are a few secrets to making a salad that lasts through the week! First and foremost: if it's gonna wilt (like romaine lettuce) or go bad (like avocado) don't add it, unless you mix it in the morning of. Tangy orzo salad is a super popular recipe of Giada's, and with good reason. It's so simple with minimal ingredients and effort, but gets a great variety of flavor from fennel, cranberries, arugula and mozzarella.
