This one literally goes with anything and everything, from warm potato salad to a salad of delicate Bibb lettuce, radishes, and avocado. Leftover dressing will keep for up to 14 days in the refrigerator. Just shake or whisk to combine before using.

Ingredients

  • 1 small shallot (minced)
  • 1/4 cup apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon chopped fresh thyme leaves
  • 3/4 teaspoon agave
  • 1/2 teaspoon salt
  • 3/4 cup extra-virgin olive oil

Instructions

  1. Place the shallots in a fine-mesh strainer and rinse under warm water, drain well. Transfer the shallots to a bowl, add the vinegar and allow to sit at room temperature for 5 minutes. Add the mustard, thyme, agave, and salt and whisk to combine. Continue whisking and slowly drizzle in the olive oil until fully incorporated and emulsified.

    Authentic vinaigrette is not sweet! Do not add sugar, agave or honey. I am French and went to cooking school. The only ingredients you need are: strong French mustard, red wine vinegar and olive oil. Approx. 2 tbsp mustard for 1/2 cup vinegar + 1 cup oil. Add a little salt and pepper, garlic and parsley (or échalote).

    I don’t eat agave…. could I substitute honey?
