These shrimp and grapefruit skewers are such a fun appetizer for a summer barbecue. The grilled shrimp paired with bitter grapefruit is a wonderfully unexpected combination. Topped with a dressing made of fresh mint, Calabrian chili, grapefruit juice, and olive oil, these simple skewers are packed with flavor.

While you've got the grill out, make it a full meal! These skewers would be a great appetizer for my rosemary garlic chicken burgers, or even my favorite grilled pizza.
