A twist on traditional kettle corn, this version has the added crunch of flaked sea salt. Be sure to shake the pot continuously as the corn pops or the sugar will burn.

Ingredients

  • 1/4 cup canola oil
  • 1/2 cup popcorn kernels
  • 3 tablespoons sugar (try turbinado sugar if you have it)
  • 2 tablespoons fleur de sel (flaked sea salt or to taste)

Instructions

  1. Heat the oil in a heavy pot with a lid over medium-high heat.
  2. Add the popcorn and sugar, swirl to distribute the sugar, and cover. Cook, shaking the pan continuously, until the popping begins to slow. Remove from the heat and set aside, covered, for a minute or two. The residual heat will pop most of the remaining kernels.
  3. Immediately turn the popcorn out into a bowl and sprinkle with the flaked salt. Toss to combine (careful, the molten sugar is very hot!).
