My grandfather was a big fan of a coffee granita, and this recipe was created to honor him! This refreshing dessert was one of his favorite things to eat on a hot day in Capri. It really is the perfect treat on a warm day - the icy texture of the granita with a strong coffee flavor paired with freshly whipped cream is just wonderful.
Even better? This is so easy to make. Just mix up some coffee, sugar, a pinch of salt and vanilla (or you can use a flavored coffee syrup, if you like - hazelnut would be fun!) and let it freeze. Scrape up the frozen bits after 2 hours, then freeze again - scrape again after a final 2 hours, and it's done. You can make a big batch and keep it in your freezer, too... you'll be thankful for it on a hot day!
Another fun spin on this recipe is to drown the granita in some liqueur. Limoncello is delicious and gives it even more of a refreshing flavor, but something like Amaretto would be absolutely divine too!
Easy Coffee Granita

Ingredients
3 cups warm coffee
1/2 cup sugar
1 teaspoon pure vanilla extract
Pinch of salt
Whipped cream (lightly sweetened, for serving, optional)
Limoncello (for serving, optional)
Instructions
In a bowl, stir together the coffee, sugar, vanilla and salt until the sugar dissolves. Pour into an 8-inch square baking dish and freeze for 2 hours. Remove from the freezer and use a fork to scrape and stir any of the ice that has formed. Return to the freezer for another 2 hours and repeat. The granita is now ready to serve with a dollop of lightly sweetened cream or drowned in a 1/2 ounce shot of limoncello.
