Ingredients
- 1 tablespoon whole grain mustard
- 1 tablespoon apple cider vinegar
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon kosher salt (divided)
- 1 apple (such as fuiji or pink lady, halved and cored)
- 1 5ounce container baby arugula
- 1/2 cup chopped smoked almonds
1/4 cup crumbled goat cheese
Instructions
- As seen on: Giada Entertains, Episode 3. Impromptu Party.
- In a large bowl, whisk together the mustard and vinegar. While whisking, drizzle in the olive oil until the dressing is emulsified. Season with 1/4 teaspoon salt.
- Using a knife or a mandolin, thinly slice the apple into half moons. Toss to coat in the dressing. Add the arugula, remaining salt and almonds and toss to coat. Top with a few dollops of the ricotta and serve immediately.
