Apple And Smoked Almond Salad With Goat Cheese

This easy salad has a great variety of contrasting flavors and textures. Crunchy almonds, crisp apples, tangy cheese all get tied together with a punchy vinaigrette. You can substitute the goat cheese for gorgonzola or even ricotta salata!

Ingredients

  • 1 tablespoon whole grain mustard
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt (divided)
  • 1 apple (such as fuiji or pink lady, halved and cored)
  • 1 5ounce container baby arugula
  • 1/2 cup chopped smoked almonds
  • 1/4 cup crumbled goat cheese

Instructions

  2. In a large bowl, whisk together the mustard and vinegar. While whisking, drizzle in the olive oil until the dressing is emulsified. Season with 1/4 teaspoon salt.
  3. Using a knife or a mandolin, thinly slice the apple into half moons. Toss to coat in the dressing. Add the arugula, remaining salt and almonds and toss to coat. Top with a few dollops of the ricotta and serve immediately.
