Giada Tried It: DadaEats' Banana Bread Muffin Tops

Wellness may be top of mind, but we're not making any sacrifices in the dessert department - these gluten-free, dairy-free treats are every bit as delicious as they are nutritious.

When a friend turned us on to Samah Dada of DaDaEats.com, Giada was immediately intrigued. There's no denying that clean, healthy recipes (especially those involving baking) can oftentimes be complicated or call for expensive and hard-to-find ingredients. But to our delight, Samah keeps it simple and easy- and above all - super tasty!

"Perhaps the best part about Samah's Banana Muffin Top recipe: I had all the ingredients in my cupboard already. Now I get that not everyone has almond flour and coconut flour handy, but you can find them at any mainstream grocery store these days... even Target carries them. Jade, my sister, and everyone I fed these to loved them! And the whole recipe took only 30 minutes from start to finish." - Giada De Laurentiis

Note, this recipe makes just 4 banana muffin tops-- perfect when you want just a treat for yourself but double or triple if you're making for a crowd. These will go fast!

Ingredients

  • 1 very ripe banana (mashed)
  • 1 egg (beaten)
  • 2 tablespoon unsalted raw creamy almond butter or peanut butter
  • 2 tablespoon grade A dark maple syrup
  • 1/2 tablespoon coconut oil (melted and cooled)
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon kosher salt
  • 1/4 cup semisweet chocolate chips*

Instructions

  1. Preheat your oven to 350 degrees F. Prepare a cookie sheet by lightly greasing with oil or nonstick spray.
  2. In a medium bowl, whisk the mashed banana, beaten egg, almond butter, maple syrup, and the cooled coconut oil until creamy and smooth.
  3. In a separate bowl, whisk together almond flour, coconut flour, baking powder, baking soda, and salt.
  4. Add the dry ingredients to the banana mixture. Using a rubber spatula, mix until just combined. Fold in the chocolate chips.
  5. On the prepared cookie sheet, evenly divide the batter into four muffin tops. If desired, place extra chocolate chips on top.
  6. Bake for 15-20 minutes until the edges are golden brown. Enjoy!
