Kids get all the box-lunch attention, but for those of us whose work keeps us deskbound, bringing your lunch from home is the best way to make sure you get a well-balanced meal when you need it most. Lunchtime can be a minefield of bad options, and when you're pressed for time, it's easy to choose convenience over nutrition.
 
That stops now! These lunch box options are healthy, sophisticated, and most importantly, delicious. They can be easily made in a few minutes the night before you'll want them, or even in the morning in about as much time as it takes to sip your coffee. And they'll hold up well in the long wait until lunch- no wilted salads or soggy sandwiches here. Add some fresh fruit and sparkling water, and your lunch box will be the envy of the schoolyard and the break room.
