In Italy, it’s not unusual to find a spritz garnished with an olive, so why not take it a step further with a drizzle of olive oil, too? The oil’s savory richness softens the Aperol’s sweetness and acidity, lending the cocktail a silkier, more luxurious feel. And, truly, it’s just so chic.

If you truly want to emulate the classic Italian aperitivo hour, serve these alongside some simple bites of salted nuts, potato chips and, yes, more olives.

Ingredients

  • Ice cubes
  • 3 oz (90 ml) Prosecco, well chilled
  • 2 oz (60 ml) Aperol
  • 1 oz (30 ml) soda water, chilled
  • 1 fresh orange wedge, from a Navel orange
  • 1 large Cerignola or Castelvetrano olive
  • Extra virgin olive oil, for drizzling

Instructions

  1. Fill a wine glass with plenty of ice, to roughly three-quarters full. Pour in the Prosecco, followed by Aperol, and finish with soda water. Add the orange wedge, and skewer your olive and rest it across the rim or drop it gently into the glass.
  2. Just before serving, drizzle a few drops of extra virgin olive oil over the surface. It will float in tiny golden beads on the cocktail.
