Ingredients

  • ¼ cup lime juice (from 4 small or 2 large limes)
  • 2 tablespoons extra-virgin olive oil
  • ¬æ teaspoon kosher salt (divided)
  • ¼ teaspoon freshly ground black pepper
  • 2 avocados
  • 1 cup grapefruit segments (from 2 or 3 ruby red grapefruit (see Cook's Note))
  • ½ cup toasted almonds (roughly chopped)
  • 1 serrano chile (roughly chopped)
  • ½ cup cilantro leaves (roughly chopped)
  • 1 head Boston or butter lettuce (leaves separated, washed, dried, and left whole)

Instructions

  1. In a small bowl, whisk together the lime juice, olive oil, ½ teaspoon salt, and black pepper. Set the dressing aside.
  2. Halve each avocado and remove the pit. Scoop the flesh from the halves with a large spoon and dice it into bite-sized pieces. Combine the avocado with the grapefruit, almonds, chile, and cilantro leaves. Toss gently with the dressing and the remaining ¼ teaspoon salt. Spoon the mixture into the lettuce leaves and serve.
