California Lettuce Wraps

Ingredients
- ¼ cup lime juice (from 4 small or 2 large limes)
- 2 tablespoons extra-virgin olive oil
- ¾ teaspoon kosher salt (divided)
- ¼ teaspoon freshly ground black pepper
- 2 avocados
- 1 cup grapefruit segments (from 2 or 3 ruby red grapefruit (see Cook's Note))
- ½ cup toasted almonds (roughly chopped)
- 1 serrano chile (roughly chopped)
- ½ cup cilantro leaves (roughly chopped)
- 1 head Boston or butter lettuce (leaves separated, washed, dried, and left whole)
Instructions
- In a small bowl, whisk together the lime juice, olive oil, ½ teaspoon salt, and black pepper. Set the dressing aside.
- Halve each avocado and remove the pit. Scoop the flesh from the halves with a large spoon and dice it into bite-sized pieces. Combine the avocado with the grapefruit, almonds, chile, and cilantro leaves. Toss gently with the dressing and the remaining ¼ teaspoon salt. Spoon the mixture into the lettuce leaves and serve.
