In Italy, vegetables are only grown where they thrive best. While the international understanding of Italian food is all pasta and pizza, it wouldn’t be a proper Italian meal without a few beautifully prepared vegetable dishes. Whether as meal-starting antipasti or contorni (side dishes) to accompany a meat or fish entrée, vegetables are often delicious scene-stealers. They’re served braised, sauteed, marinated, or simply composed in salads—but always with bold flavors and harmonious combinations. No bland steamed broccoli here! Instead, think broccoli rabe sauteed in extra virgin olive oil with garlic and Calabrian chile flakes, or Tuscan fagioli all’uccelletto, cannellini beans baked in a garlicky tomato sauce.

Eggplant caponata is another traditional vegetable dish with a long history­. Similar to ratatouille, the traditional Sicilian dish is comprised of cooked-down summer veggies to become luxuriously silky. But caponata adds big, punchy flavors like vinegar and capers, plus a sweet-and-sour note that is achieved with vinegar and sugar or extra-sweet tomatoes. It’s a bright, flavorful dish that can be used as a spread, a side, a dip, and more.
