Sweet and salty is a match made in heaven, and when a little spice is added to the mix, it's a bold flavor combo that you'll keep going back for. Often referred to on restaurant menus as a Bee Sting pizza or a variation of the phrase, this pizza gets a drizzle of honey on top of spicy salami for the contrast of flavor. If you like it even spicier, finish it with a sprinkling of red pepper flakes!

  1. Preheat the oven to 450 degrees F. Place one rack as low as it can go in the oven and another rack in the top third of the oven. Remove your pizza dough from the refrigerator 1 hour before using.
  2. Drizzle a rimmed baking sheet with 1 tablespoon oil. Place the pizza dough on the pan and using your fingers, stretch the dough into a 14-inch oval. Dimple the dough all over with tips of your fingers. Drizzle the dough with remaining 1 tablespoons olive oil. Sprinkle the dough with the sliced garlic, the pecorino cheese and 1 cup parmesan cheese. Top with the soppressata and sprinkle with the remaining 1/4 cup parmesan cheese. The soppressata should be shingled covering most of the crust. It will shrink slightly during baking. Bake on the lowest rack for 10 minutes. Rotate the tray to the top rack and bake until deeply golden brown and bubbly, another 5 minutes. Remove to a board and slice into squares. Drizzle with the honey and sprinkle with the oregano and remaining 1/4 cup parmesan cheese before serving.
