Ingredients
- 1 cup pumpkin seeds (rinsed and dried, from one medium pumpkin)
- 1 tablespoon olive oil
- 1 tablespoon freshly grated Parmesan cheese
- 1 teaspoon cayenne
- 1 teaspoon kosher salt
- 1 teaspoon lemon zest from a small lemon
Instructions
- Preheat the oven to 300°F. Spread the pumpkin seeds on a small, rimmed baking sheet and toss with the olive oil. Place the tray in the oven and bake for 15 minutes to dry out the seeds. Remove it from the oven and increase the temperature to 350°F. Sprinkle the seeds with the cheese, cayenne, and salt, and mix well.
- Return the tray to the oven and bake an additional 10 to 12 minutes, stirring halfway through, or until the seeds are crispy and the cheese is golden. Add the lemon zest and mix well. Allow the seeds to cool completely on the tray. After cooling, the seeds can be stored in an airtight container for several days.
