Ingredients

  • PAM Olive Oil Cooking Spray Pump
  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon kosher salt
  • 3/4 cup powdered sugar
  • 1 ripe banana (mashed with back of a fork, about ½ cup)
  • 1/4 cup olive oil
  • 1 egg (beaten)

Instructions

  1. Preheat the oven to 400 degrees F. Spray a mini muffin tin with the PAM spray using 1 pump per cup and holding the spray about 3 to 4 inches from the tray. Set aside.
  2. In a medium bowl whisk together the almond flour, cocoa powder, salt and sugar. Add the banana, olive oil and egg. Using a rubber spatula, stir to combine.
  3. Divide the batter into the muffin tins filling each one to the top. Bake for approximately 15 to 20 minutes or until puffed and set to the touch. Allow the muffin bites to cool completely in the pan before unmolding.

    Do not try! Followed exactly, doubled so enough to freeze, they were not edible. Terrible terrible recipe. I feel awful to have wasted such good ingredients.
