Ingredients
- 2 cups diced (ripe tomatoes, about 2 large tomatoes)
- 1 Serrano chili (minced)
- 1 small shallot (minced)
- 1 cup grated carrot (about 1 large carrot)
- 1/4 teaspoon ground coriander
- 1 tablespoon chopped basil
- 1 tablespoon white balsamic vinegar
- 2 teaspoons extra-virgin olive oil
- 3/4 teaspoon kosher salt
Instructions
- In a medium bowl combine the tomatoes, chili, shallot, grated carrot, coriander, basil, vinegar, olive oil, and salt. Toss gently to combine.
