Ingredients

  • 1 head butter lettuce (torn into bit-size pieces)
  • 1/4 cup torn fresh mint leaves
  • 1/4 cup thinly sliced radishes
  • 3 tablespoons toasted salted sunflower seeds
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons extra-virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 cup freshly grated Pecorino-Romano cheese

Instructions

  2. Toss the lettuce with the mint, radishes and sunflower seeds in a large bowl. In a small bowl, whisk together the cider vinegar, olive oil and salt. Drizzle the salad with the dressing, and sprinkle with the Pecorino-Romano.
