Simple Pesto Pasta Salad

Ingredients

1 pound short pasta, such as Caserecce, cooked, drained and cooled to room temperature, with 1/2 cup reserved pasta water

¾ cup storebought or prepared pesto
- ½ teaspoon salt, plus more, if needed

1 cup oil-packed sundried tomatoes, drained and chopped into
½ inch pieces, oil reserved
- 2 tablespoons oil from sundried tomatoes
- 1 cup mozzarella ciliegine, drained and halved
Instructions
Pour the pesto into a large serving bowl. To the pesto, add the cooked and cooled pasta. Stir to evenly coat the pasta in the pesto. Add the salt and stir to coat. Add 1/4 cup of pasta water thin the dressing if needed.
Stir in the chopped sundried tomatoes along with 2 tablespoons of sundried tomato oil, and halved mozzarella. Stir and taste, adding more salt if needed. Serve room temperature or cold.
