Ingredients

    For the Potatoes:

  • 2 pounds Yukon potatoes (sliced into 1/4-inch rounds)
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • For the Dressing:

  • 1 teaspoon grated lemon zest
  • 2 tablespoons fresh lemon juice (from one medium lemon)
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons finely grated Parmesan (plus more for shaving)
  • 1/4 cup freshly chopped basil
  • 2 tablespoons freshly chopped parsley

Instructions

  1. Preheat a grill or grill pan to medium-high heat. Place the potato slices into a large bowl and toss with the olive oil, salt, and pepper. Grill the potato slices in batches until they are golden and cooked through, about 4 minutes per side. Transfer the potatoes to a large serving bowl to cool slightly while you make the dressing.

    I made this—and added about 1/4 cup of sliced pepperoncini to the warm potatoes for a little kick, then mixed with the dressing. Really good!
