Balsamic vinegar, a staple of Italian cuisine, is beloved for its rich and complex flavors that are crafted through a meticulous aging process. Traditionally, high-quality vinegar is used in raw applications to fully appreciate its depth - however, its versatility extends far beyond salads and marinades, lending itself to creative culinary uses, such as these Balsamic Candied Nuts. Coating almonds and walnuts in a simple mixture of egg whites, honey, salt and Italian balsamic vinegar and baking them to crispy perfection is your ticket to sophisticated snacking. The balsamic flavor is mild, but caramelizes into a rich, toasty taste that pairs perfectly with an aperitivo.

-
1 tablespoon honey
-
1 tablespoon balsamic vinegar, such as Guerzoni
- 1 cup raw almonds
- 1 cup raw walnuts
- 1 teaspoon kosher salt
Instructions
- Preheat the oven to 275 degrees F. Line a rimmed baking sheet with parchment paper and set aside.
- In a medium bowl whisk the egg white and honey until light, fluffy and almost at soft peaks. Add the balsamic and continue to whisk until soft peaks form. Fold in the almonds and walnuts and the salt. Spread the mixture evenly on the prepared sheet and roast for 30 minutes, stirring halfway through. Increase the heat to 300 degrees F and roast until just slightly tacky, another 10 to 15 minutes. Allow the nuts to cool completely on the baking sheet before removing to a bowl to serve.
