In southern Italy, it’s traditional to enjoy “vino e percoche,” which translates to “wine and peaches.” It’s effectively a simple Italian spin on sangria, and the flavor of ripe peaches lends itself beautifully to a crisp summery wine. This dessert is a play on the drink; it begins with rosé marinated peaches or nectarines. Once the peaches and wine are equally infused, the rose simmers away with some honey, cinnamon and vanilla until it reduces into a perfectly pink syrup. It’s stunningly delicious spooned over gelato or ice cream.

Ingredients

  • 1 1/2 cups rose wine, such as Wolffer Summer in a Bottle Long Island Rosé
  • 3 peaches or nectarines, cut in 1-inch pieces
  • 2 tablespoon wildflower honey
  • 1 cinnamon stick
  • 1/4 teaspoon pure vanilla extract
  • Pinch of kosher salt
  • Vanilla ice cream, to serve
  • Toasted slivered almonds, optional

Instructions

  1. In a medium bowl combine the peaches and rose wine. Allow to marinate at room temperature for 1 1/2 hours.
  2. Strain the rose into a small saucepan and add the honey, cinnamon stick, vanilla extract and salt. Bring to a simmer over medium heat and allow to cook, stirring occasionally, until reduced by half, 10 to 15 minutes. Pour the syrup back over the peaches and cool to room temperature. Serve the peaches over a scoop or two of vanilla ice cream with a drizzle of the wine syrup and slivered almonds if desired.
