Rosé Marinated Peaches And Gelato

Ingredients
- 1 1/2 cups rose wine, such as Wolffer Summer in a Bottle Long Island Rosé
- 3 peaches or nectarines, cut in 1-inch pieces

2 tablespoon wildflower honey
- 1 cinnamon stick
- 1/4 teaspoon pure vanilla extract
- Pinch of kosher salt
- Vanilla ice cream, to serve
- Toasted slivered almonds, optional
Instructions
- In a medium bowl combine the peaches and rose wine. Allow to marinate at room temperature for 1 1/2 hours.
- Strain the rose into a small saucepan and add the honey, cinnamon stick, vanilla extract and salt. Bring to a simmer over medium heat and allow to cook, stirring occasionally, until reduced by half, 10 to 15 minutes. Pour the syrup back over the peaches and cool to room temperature. Serve the peaches over a scoop or two of vanilla ice cream with a drizzle of the wine syrup and slivered almonds if desired.
