This cake is a testament to that delicious marriage - not overly sweet, and with a perfectly moist crumb from a combination of hazelnut oil and olive oil, it's a delicious snacking cake for any time of the day. Pair it with some espresso for an all-around amazing combination of flavors.

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 1/2 cups sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/4 cup olive oil
  • 1/2 cup hazelnut oil
  • 1 1/4 cup milk, at room temperature
  • 3 large eggs, at room temperature
  • 1/2 cup bittersweet chocolate chips
  • Whipped cream, to serve

Instructions

  1. Preheat the oven to 350 degrees F. Brush the inside of a 9-inch springform pan lightly with olive oil and line the bottom with a round of parchment paper.
  2. In a large bowl whisk together the flour, cocoa powder, sugar, baking powder, baking soda and salt. Add in the olive oil, hazelnut oil, milk and eggs and whisk until just combined. Pour into the prepared pan and sprinkle evenly with the chocolate chips. Bake until puffed and a toothpick inserted in the center comes out with just a few crumbs, 55 minutes to 1 hour. Serve with a dollop of soft whipped cream.
