Add some of La Dolce Vita to this year's Memorial Day feast!
Memorial Day is the unofficial starting line to summertime fun (we know it's not really until June 21st - but we're feeling the spirit!) and it calls for a feast. Not only do we feel the excitement of summer, but it's the time of year we stop to reflect on and honor those who served and sacrificed for our country. What better way to feel grateful for what we have than a weekend of family, friends, fun and feasting?
The star of this year's menu are Giada's Caprese Burgers! Homemade pesto mixed into the patties makes for a super flavorful and moist burger. They're completed with melty mozzarella, a slice of juicy tomato and pesto mayo: think Capri meets USA!
Our main side dish of choice this year is Grilled Artichokes with Parsley Vinaigrette - you can prep these artichokes ahead of time by fully cutting them and boiling them first, then letting them hangout in the fridge overnight. That way, all they need is a quick char on the grill and a dousing of zingy parsley vinaigrette when it's time to get cooking.
In the spirit of celebrating all the season has to offer, we'll be whipping up Giada's Tomato, Avocado & Escarole salad. This salad is loaded with pretty much everything we love! Super sweet and juicy cherry tomatoes are cropping up all over in Southern California, and avocados are in season at their buttery-best.
We're keeping it low-key for dessert this year with Raffy's Strawberries in Vinegar. This sophisticated take on strawberries is minimal, which lets their natural juicy flavor shine - and now that strawberries are officially in season and you can buy them in huge baskets at a cheap price, this is a perfectly timely dessert!
