Ingredients
- 1/2 block (4-ounces) cream cheese, at room temperature
- 1 cup part skim ricotta cheese
- 1/2 cup sour cream, at room temperature
-
1 1/4 teaspoons dried oregano, divided
- 1 teaspoon kosher salt (1 teaspoon)
- 1 cup shredded mozzarella cheese, divided
-
3/4 cup chopped sun-dried tomatoes in oil, drained and chopped, divided
- 3/4 cup diced fennel salami or pepperoni, divided
- 2 tablespoons chopped pepperoncini, about 5 peppers
- Pita chips, bread or vegetables, to serve
Instructions
- Preheat the oven to 425 degrees and position a rack in the center of the oven.
- To the bowl of a food processor add the cream cheese, ricotta, sour cream and 1 teaspoon oregano. Puree until smooth. Add 1/2 cup mozzarella cheese, 1/2 cup chopped sundried tomatoes, and 1/2 cup diced salumi and pulse just to combine. Spoon the mixture into a 9-inch pie plate or baking dish and spread evenly. Sprinkle with the remaining 1/4 cup tomatoes, 1/4 cup salumi, 1/4 teaspoon oregano and 1/2 cup mozzarella. Bake until warmed through, 8 to 10 minutes. Switch to high broil and broil until the top is lightly browned and the cheese is fully melted, another 4 minutes. Allow the dip to rest for 5 minutes before serving.
- Serve with pita chips, chunks of bread or vegetables for dipping.
