Ingredients

  • 12 Campari tomatoes
  • 3/4 teaspoon kosher salt
  • 12 small fresh basil leaves (chopped)
  • 12 mozzarella ciliegine (dried well)
  • 1/4 cup panko breadcrumbs
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon dried oregano

Instructions

  1. This recipe originally appeared on Giada Entertains: Jade's Chocolate Factory.
  2. Preheat the oven to 450 degrees F.
  3. Using a small serrated knife, cut off the top eighth of each tomato and hollow out the insides, leaving the sides intact. (Discard the seeds and insides.) Slice a small sliver off each tomato bottom so it sits flat. Drain well on paper towel, taking care to dry the inside.
  4. Sprinkle the tomatoes with 1/4 teaspoon salt. Stuff each tomato with a pinch of the chopped basil and a mozzarella ball and set on a small rimmed baking sheet.
  5. Combine the breadcrumbs with the olive oil, oregano and the remaining 1/2 teaspoon salt in a small bowl. Divide the mixture among the tops of the tomatoes.
  6. Bake until golden and the cheese is melted, about 10 minutes. Allow to cool for 10 minutes, then serve warm.

    I made the Roasted Caprese Bites for, believe it or not Super Bowl. We wanted a lite bite to go with my other options. These were perfect. Easy, few ingredients and very easy. I prepared them ahead of time and popped them in the oven when I needed them. The Flavor was amazing. The most delicious bite. I was excited to share this recipe with all my friends at work. I will make them again and again.
