The corn and rice flours are carefully selected from pure heirloom varieties of these simple grains, and are sourced directly from family farmers to ensure complete quality control. Our pasta artisans use their cutting-edge knowledge to turn these three simple elements into a traditional pasta that’s kneaded, shaped, and slowly air-dried the same way pasta has been made for centuries.
