Since creating my Sheet Pan Layerless Lasagna, I've been hooked on baking pasta on a sheet pan for maximum surface area and deliciously crisp bites. This cooking method lets every portion get that perfectly crunchy topping that elevates baked mac and cheese and other pasta dishes to the next level.

I’ve tried a variety of cheeses, and while provolone is a wonderful option, fontina’s nutty, buttery flavor really shines in this recipe. Feel free to skip the tomatoes if you prefer, but their sweetness beautifully balances the rich cheese, adding a burst of flavor in every bite.

If you want to get a bit historical, the pasta shape I use here – taccole – is similar to the one used in the earliest mac and cheese recipes. With its ruffled edges and bite-sized shape, taccole bakes up perfectly crispy, making it an ideal choice for a sheet pan pasta bake.
