It's one of those dishes that you make on a frigid weekend when you have an easy 2 hours to spare, letting the dish slowly develop into a bubbly, crunchy, delicious casserole. We found a way to enjoy this dish when you only have a fraction of the amount of time, all thanks to the help of a few helpful shortcuts.
We turned this dish from a casserole situation into a one-pan stovetop wonder, meaning you can start and finish the whole thing in 30 minutes (yes, really!). We also opt for a shredded rotisserie chicken (one of our favorite ways to speed up weeknight meals) in lieu of home cooked. You still get all of the irresistably comforting flavor of the traditional dish - hearty sauteed mushrooms and shallots, white wine, creamy pasta and the snap of peas - but in mere minutes.
