Orzo Stuffed Peppers make Meatless Monday a breeze


If you've been following us for awhile, you know we're advocates for the global movement of Meatless Monday! The concept is simple: a day a week, cut out the meat. 
Sometimes, it's hard to find meal inspiration for going meatless for a day - which is where we step in! We like to share some of Giada's best plant-based meals that are so good, you won't miss the meat for a second. Our current weekly standby? Orzo Stuffed Peppers!
Grated zucchini, pecorino cheese, garlic, tomatoes and par-cooked orzo pasta are stuffed into sweet bell peppers and steam in the oven in broth (substitute chicken stock with vegetable broth for a truly vegetarian meal!) making a super flavor-boosted stuffed-pepper situation.
