This organic taccole from Giadzy is a shape we’ve never seen anywhere in the U.S., one that’s only produced by a handful of Italian pasta makers. With a ridged center and ruffled edges similar to those commonly seen on American lasagna sheets, the medium-sized squares are a textural delight. All those furrows and frills create additional surface area for sauces to cling to, delivering maximum flavor in every bite. This pasta shines in Giada’s viral sheet pan lasagna and in baked casseroles of all kinds.

Giadzy Pasta is crafted in Abruzzo, a verdant gem on central Italy’s east coast. Abruzzo has the highest concentration of national parkland in Europe, including the graceful peaks of the Majella mountains, home to golden eagles and stunning wildflowers. Pure spring water from the Majella range is combined with organically grown semolina wheat flour from the base of the mountains to make Giadzy Pasta sing with a sweet aroma of pure wheat. Following ancient artisan techniques, Giadzy Pasta is cut on 100-year-old bronze dies, giving the pasta a rough, rustic texture that soaks up sauce, making every meal exceptionally flavorful. After it’s shaped, the pasta is slowly air-dried for up to 36 hours, protecting its delicate flavor and dense texture. The result: the perfect al dente bite every time.

One of Giada’s favorite ways to use taccole is an homage to the Italian roots of mac and cheese, which was first documented in a 13th-century cookbook using broken sheets of lasagna. Taccole’s flat squares work well layered into any pasta casserole, and are a hearty choice served with rich meat-based ragus. In its home of Campania, it is traditionally served with beans or chickpeas.
