Nothing spells luxury like truffles, and when it comes to this special ingredient, there’s no place like Italy. Found in the forests of the Piedmont, Tuscany, and Umbria regions, these uniquely delicious tubers grow underground among the roots of chestnut, oak, and hazelnut trees in cool, humid climates. They’re uncovered by a trifulao (truffle hunter) and their specially trained dog, who sniffs out the distinctive aroma of the truffles and indicates where to dig. It’s a beautifully meditative process with a delicious outcome!

There are three commonly harvested types of truffle found in Italy, each with its own unique characteristics. The black truffle is earthy and pungent, harvested in the winter, from late November through early March. The summer truffle, only harvested during the hazy summer months, is more delicate, with a sweet, nutty profile. The ultra-rare white truffle is prized for its deeply savory flavor, like aged cheese. These grow in the northwestern Piedmont region, and are also known as the Alba or Piedmont truffle. They are harvested in the late fall months and can only be foraged, never cultivated, making their discovery something of a natural miracle.
