My motto for a stress-free Feast of the Seven Fishes: have one dish in the oven, one on the stove and one already done!

The Feast of the Seven Fishes is an Italian Christmas Eve must-have. To cook your own, follow my rule of thumb: one on the stove (a pasta dish), one in the oven (a showstopper baked fish), and one already done (a make-ahead seafood salad or crostini)! Let the market be your guide when choosing your fish to make sure everything's perfectly fresh.
