These festive icebox cookies will have everyone reaching for seconds! Lemon Ricotta Cookies are by far my most famous and popular recipe, and I took a page from my restaurant, Giada Vegas, by sandwiching some gelato in between. This recipe calls for vanilla, but raspberry is a favorite flavor combination, too!
Make these well in advance so that they completely set before serving!
4th of July Lemon Ricotta Cookie Sandwiches
- 1 batch of Giada's Lemon Ricotta Cookies
- 1 pint vanilla ice cream or gelato
- Red & blue sprinkles
- Once the cookies are glazed and cooled, set up a station with ice cream and sprinkles. Sandwich one generous scoop of ice cream in between two cookies, and roll the edges into the sprinkles to cover.
- Place cookies in the freezer for 2 hours to completely set.
