Video: Casarecce with Sicilian Pesto and Shrimp
Frozen shrimp are a versatile freezer essential, and when combined with one of my favorite condiments, they transform into a surprisingly effortless weeknight dinner. This pasta dish offers a fresh, light take on the classic tomato sauce, as the tomatoes are only gently warmed by the heat of the pasta rather than fully cooked. I especially love making it in the summertime when cherry tomatoes are at their juiciest and most flavorful. A short pasta shape works best here, allowing the pesto to cling to every curve and crevice—something long noodles like spaghetti can’t achieve as well. Even if you’re whipping up the pesto from scratch, this meal comes together in the time it takes to boil the pasta.
