This antipasti breakfast sandwich is the ultimate pick-me-up.
For my new restaurant, Pronto by Giada, I wanted to develop dishes to suit every appetite, all day long. At breakfast time, that could mean anything from the busy convention-goer who wants a quick espresso and a pastry to go to the family with small kids who need some healthy fuel for their vacation fun. Then there are the party animals, those who might have indulged too much the night before and are looking for something to bring them back to life.
Packed with mortadella, bacon, prosciutto cotto, provolone, and egg, my antipasti breakfast sandwich is the answer. With lots of protein to replenish your energy stores after a late night, it’s just the thing to turn to when you need some extra help getting your day started. It’s loaded with all the flavors of my favorite antipasti platter for a little salt boost (get those electrolytes!), but won’t weigh you down so you can get back to the business of having fun.
