Being a rockstar chef means learning how to be adaptable in the kitchen – and that’s what this “non recipe” is all about!
We’ll be honest here! When we are making casual weeknight dinners, it’s rare that we’ll actually ever pull out the measuring cups. Oftentimes for us, recipes serve more as an inspirational concept than something we actually follow line-by-line. A handful of this, a sprinkle of that… Needs more olive oil, needs some red pepper flakes… you get the gist!
The more you cook, the more intuitive the process becomes. You’ll start getting a better sense of how much salt to add or how much pasta water you’ll need without needing to really look at a recipe. The more comfortable you get, the more you can learn to trust yourself and improvise!
This “non-recipe” is a jumping point for this concept. We have the ingredients laid out, but you can edit a lot to your tastes. Don’t have prosciutto at home? Use bacon… ham… pancetta… whatever you have! Use any short pasta you have on hand. Add salt until it tastes right. Use black pepper or pepper flakes if you like a kick. Want some more greens in your diet? Throw in a handful of spinach or arugula at the last minute and let it wilt. The world is your oyster (or your pasta recipe!)
That’s what being a great cook is all about! Look at recipes as less of a confined concept, and more of a jumping point to add your own spin and taste to things. (unless we’re talking about baking – then things get a little bit more precise!)
