Pappardelle are wide, flat noodles that are super easy to make by hand. Start by grabbing a smaller chunk of dough and rolling it out as thin as possible with a rolling pin (ideally, if you hold up the sheet of dough, you’ll want to see the silhouette of your hand on the other side!). Once it’s at your desired thickness, simply cut strips about 1 inch wide, and as long as your dough is. It’s really not an exact science – that’s the beauty of it!
Cavatelli
For this fun folded pasta shape, you start in a similar fashion as the orechiette. Instead of using a butter knife to drag pieces, use your index and middle finger to pull the pieces toward you to create some roll-and-fold action.
