This simple Italian salad takes just a few minutes to throw together, and what you add in it is really up to you! This is the second dish in our “non-recipe” installment, in which we’re embracing the idea of cooking intuitively and using what you have as opposed to strictly following recipes.
For this salad, you can use any dark leafy green in place of kale (arugula, spinach… anything!). Don’t have a rotisserie chicken or leftovers on hand? Go the vegetarian route with toasted nuts to give the salad some more protein and body. Whichever route you take, this is an easy healthy Italian salad that you’ll turn to for a quick lunch time and time again.
